Thai Stir Fried Vegetables- Just what the doctor ordered!

This one is for the vegetarian in you. Thai’s go vegetarian for special religious festivals form September to October and this is one of their favourite dishes, known as Phad Pak Ruam Mit’.

The dilemma with Pakistanis is that we hardly have any taste for eating vegetables-just vegetables. In most of the households, vegetables are cooked with meat. I don’t deny the fact that some vegetables do taste best when cooked with meat (Aalo Gosht being one!). But vegetables loose their nutrition value when cooked (lets just say overcooked) with meat and the real taste of veggies is also lost. If meat is the core ingredient in your household, try replacing one dish with these stir fried vegetables.

This dish can be made with most of the available seasonal vegetables.
