Parmesan Chicken-Parsley Crumbed Chicken served with Spinach

Parmesan Chicken, is surprisingly one form of crumbed golden fried chicken that I am yet to have at any restaurant. The chicken is tender from inside with a crispy coating. The trick is to get the chicken cooked just enough yet not burn the crust. This recipe of Parmesan Chicken comes from the Master Kitchen class. You can serve it with Garlic Mashed Potatoes, stir fried vegetables or buttered spinach.

Parmesan Crumbed Chicken

Recipe: Parmesan Chicken with Parsley

Ingredients

  • 2 Chicken boneless breasts (flatten the meat equally with help of a hammer or back of pan)
  • 3 cups of breadcrumbs (mix with 1 cup of plain corn flakes optional)
  • 1 bunch of flat parsely (chopped finely)
  • 1/2 cup grated Parmesan cheese (some people might kill me for saying this but you can add chedder cheese too :D )
  • 1 egg beaten (Keep it in a deep plate)
  • Salt and pepper to season breadcrumbs
  • Salt and pepper to season chicken

For spinach as a side:  Take a bunch of spinach, separate leaves from stem. Add leaves in a pan and stir till spinach reduces. Add two tablespoon of butter and mix well. Cook till the leaves are tender and cooked. Add salt and black pepper.

Instructions

  • Rub chicken with salt and black pepper
  • Mix breadcrumbs, parmesan and grated cheese. Season the breadcrumbs with salt and pepper.
  • Take chicken breasts one by one and dip in beaten egg, then in crumbs. Ensure that the chicken is quoted evenly and there is 1/4 inch thick layer of crumbs atleast.
  • Heat 2 tbsp oil in a flat pan on medium heat. Now carefully place the quoted chicken pieces in oil. If the crust is burning too quickly, lower the heat.
  • It should take about 4-5 minutes on one side. Flip on the other side carefully and cook till nicely golden brown.
  • Take it out in a plate.
  • On the serving plate place put tablespoon or two of spinach first and then on top place the crumbed chicken.
  • Serve Mashed potatoes or stir fired vegetables on the side.
