Pan Cakes – The Sunday Morning Breakfast
Since I had decided to have a go at cooking, I had not tried out something from the breakfast menu. So, on one fine Sunday morning I decided to cook breakfast myself (and when I say “myself”, there’s always a bit of help coming from my wife in that
). While having difficulty in getting out of bed, I thought of what to have for breakfast on my cheat day (Sunday is mostly a cheat day for me as I am on diet 6 days a week). Pancake recipe seemed to be the easiest and different from the daily Egg and Milk routine and I’ve always loved them. So off I went straight to the kitchen and have a go at it. It turned out to be good enough that I have made them twice.
I personally like them best served with maple syrup. But you can try whatever you like, whipped cream topped with strawberries or chocolate syrup.
The recipe is very simple and hardly takes 20-25 minutes to cook. The ingredients required are mostly available in stock at home.
Serving: 8 Pancakes
Ingredients:
• ¾ cup Milk
• 2 tablespoons white vinegar
• 1 cup flour
• 2 tablespoon white sugar
• 1 teaspoon baking powder
• ½ teaspoon baking soda
• ½ teaspoon salt
• 1 egg
• 2 tablespoon butter, melted
• Oil for brushing the pan
Directions:
1. Take a large bowl and put milk and vinegar in it. Set aside for 5 minutes until the milk turns sour. (This is used in lieu of buttermilk)
2. Take another bowl and combine together flour, sugar baking powder & baking soda. I use a whisk to mix all this before proceeding any further.
3. Whisk egg and butter into the soured milk.
4. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
5. Heat a skillet over medium heat and pour a tiny amount of oil just to coat the base.
6. Pour 1/4 cupful of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the both sides.
