Cold Cake with Walnuts and Coconut
Cold Cake is one of my favorite cakes of all times! Most importantly because it doesn’t need to be baked! (just like cheese cake) Named cold cake, this cake is usually made in winters because of use of walnuts, in Pakistan. One of the most favorite recipes I learnt from my mother.
I remember how as a child, whenever cold cake was made by Ama, we were given a slice or two to eat and the rest of it would just magically vanish. I remember digging through freezer, trying to find but it was of no use! If meanwhile any guest would visit us, it will still appear on the tea trolly. Mothers have a way of hiding things! Then, I would wait for guests to leave the house or pray they don’t eat all of it so I can enjoy the left overs.
