The Chicken and Mushroom Bread Muffins

There is always a food picture that stays in your mind and whenever you enter the kitchen at any time of the day it pops up! At the start of this Ramadan, the same thing happened with me. While going through my Facebook posts, I read a friends cry to suggest a quick recipe for Aftari. As a silent stalker i kept track of the thread and soon enough a ‘stays-in-my-mind’ kind of picture was posted for bread muffins. They looked beautiful and the recipe sounded simple.

I have a crazy routine these days with client projects extending to 10 hours work each day, the revamp of this blog (yes you will be seeing something new soon!) , and managing baby Z routine. Writing a blog and most importantly finding time to buy ingredients and actually cook them, sort of always go on the last in my to-do list.

Good news is I tried the recipe for these bread muffins and even better news is that it turned out surprisingly great! You can basically try any filling for this recipe. Its one of those lighter on your stomach categories recipe (I think i should start a section on that one now!)
